INGREDIENTS5 pounds yellow potatoes, peeled and cubed
3/4 cup apple cider vinegar
1 cup water & 1/3 cup water, divided
1 3/4 cup white sugar
1 tablespoon cornstarch
1 medium yellow onion, diced
1 pound bacon, diced
DIRECTIONS
1) In a large pot, boil the potatoes until just barely tender, about 10 minutes. Drain and set aside.
2) In a large skillet, cook diced bacon until half done, then add the onions and cook until onions are transparent. Drain off grease.
3) Meanwhile, in a small saucepan, mix one heaping tablespoon of cornstarch with the 1/3 cup water. Add vinegar, 1 cup water, and sugar. Stir over medium-low heat until the sauce thickens.
4) In a large serving bowl, combine potatoes, bacon, onion, and sauce, and stir to incorporate. Serve warm or cold.
