Mini Chocolate Lava Cakes

INGREDIENTS
6 oz. semi-sweet chocolate chips
6 oz. butter
3 eggs
1/2 cup granulated sugar
1/3 cup flour


DIRECTIONS
1) Preheat oven to 350°F.
2) Warm chocolate chips and butter in microwave for 30 second increments until melted. Stir until smooth. Set aside.
3) In a mixing bowl, beat eggs and sugar until blended a white peaks begin to form.
4) Stir in melted chocolate and flour.
5) Grease 4 ramekins and pour the chocolate batter into each one.
6) Bake for about 10-15 minutes or until outside of cake is baked and the inside is still gooey. If you bake it too long, it will overcook.

Makes four cakes. Goes great with vanilla bean ice cream!
